The way I do a bun like this is: I gather my hair in a low tail and then I split it in 8-10 portions, take each one and simply twist is at the ends until it cannot be twisted anymore. Then, I try to wrap it or cross it over the rest of the hair, rather randomly for each strand, and I pin each one of them around the hair tie. It takes some time, but with practice, you can get it done faster and faster. I hope this helps!
